Oh do I loooove cheesecake! A typical New York dessert but also very popular during the day. On my first New York visits I regularly ordered cheesecake with my coffee to go. Just because that is such a good combination. Luckily the craving has become less in the course of time. I think partly because I’ve learned how to bake a pretty good cheesecake myself.
Since I’m not a big hit in the kitchen ... if I can make this cake then you certainly can as well. Here’s my quick and easy, simple, hard to mess up recipy.
You need: a piedish and waxpaper / 50 grams butter / 200 gr Countrycookies / juice of a 1/2 lemon / 3 eggs / 150 grams sugar / 100 grams white chocolate / 600 grams creamcheese.
Make sure that all ingredients are at room temperature. Put the waxpaper in the piedish. Crumble the cookies and mix with the butter (that’s actually the hardest part). Spread the cookie/butter mixture out in the piedish. Then mix the lemonjuice with the eggs, sugar, creamcheese and melted chocolate. I always melt the chocolate in the microwave (not too long because it burns easily). Poor it in the piedish. Place that in the middle of a preheated oven (320 Fahrenheit) for about 50/55 minutes.
Don’t be disappointed if the cheesecake is a bit wobbly when you take it out of the oven. Just let it stiffen. And I think the taste is the best after a night in the refrigerator. Enjoy!
